As yours is a bike conversion, the speedo is on the front, so there should be no issues with changing the relative size of the rear rims/tyres.
Saying that, to maintain the stance, if you increase the depth of the tyre you should reduce the size of the rim.

At the end of the day, running low pressures on the back will give a less harsh ride, so you just need to balance that with the relative depth of rubber.

Maybe you just want more rubber than rim?

As big a side wall as you can get, and run at low pressure, a world of difference. The Dunlop GT qualifiers I have on the rear, look the same when they have 32 psi as they do with all the air let out, I run at 22psi.

I love the 'No Lean' rear suspension design on Big Blue. It has a big coil spring in the centre, with a shock running through the middle of it, and a height adjustable progressive shock on each side. It is a US import, and was still set to riding on the right, first time I rode it, felt like I was going to fall off, . Spirit level across the handlebars 12" from the kerb, lowered the R and raised the L until it was level
